Doing new counter tops and have to take off old tile back splash.
the tile has lath and plaster underneath and is coming off with the tile.
Sometimes just a thin layer and other times down to the lath.
How should I fill this in prep for new tile back splash?
See picture.

if it were me?? glad it is not??

Remove the remaining L/Plaster and using the old studs, provided they are in good condition, i would overboard with plasterboard.

Having had another look at the image you posted, there is an area of plasterboard in place adjacent to the window?

Suggest you consider, infill the missing plaster with plasterboard in effect add the plasterboard to the remaining lath.

Try not to cause any more vibration to the plaster and Lath, this will destabilize the remaining plaster.

Ideally, if possible, but a far larger job, remove the L/Plaster completely and replace with Plasterboard.

As for missing original plaster skim, consider skimming the entire wall? or overboard with plasterboard, trims and finishes are a problem doing the latter.
