New plaster on breeze block

I’m taking out my old tiles replacing them but really struggling to not take out all the plaster at the same time.

What method would you recommend to prepare the bare breeze blocks for the new tiles?

Update… it’s not breeze block… Should I just nail new plaster board in place?
