Understanding a Magimix4100 motor

Hi!
I've been using the forums on instructables.com but those are closing.. so I hope this will be my new DIY forum :)
anyway..
I have an old Magimix 4100. It has a "3401A" motor which I found on google.
My goal is to use this motor and control its speed somehow, but my first goal is to understand how it works.
Can anyone help me with this ? It has a relay and a capacitor but I'm not sure what's the role of each of the parts. I couldn't find a specs sheet either.
Anything would be appreciated!

If you know the motor details then perhaps you could buy a suitable speed controller through eBay; these controllers come in all voltages/amps and DC or AC.
