I have a one story extension and the (plastic) hot water and heating water pipes are fitted above the insulation. They froze this week and I’m trying to work out what the best course of action is. Any advice appreciated.

Your rigid pink insulation should be ABOVE the flexible water lines.

As seen in your pictures, you are insulating the room, and that's good. However, your erroneously insulating the pipes from any heat.....always put insulation BEHIND the services (gas/water/elec).
