Tall cabinet on an un level wall

We are converting a bathroom into a laundry room in a 1920's Spanish Revival stucco house. Plumbing and electrical are done, tile floor in, and new window is finished. We planned (and purchased) a tall 18 inch wide pantry cabinet to anchor the left side of 13 linear feet of upper cabinets with a 15 inch, 30 inch (sink), 18 inch and a void for laundry basket (really for the cat box) on the bottom. I just put a six foot level against the left wall (if you are looking at the side of the new cabinet) and realized it is just shy of an inch out of level at the top. I would like to secure the 18 inch plumb then secure all of the other cabinets level to it thus having a nice flush set of cabinets. How do I hide the "V" shaped gap (nothing on the bottom and an inch on the top) without making it look silly?
