is there such thing as bonding gap on a roof where the tiles are meant to join next door?

the builder said bcuz our new tiles are different to next doors they cant overlap so they have to leave 1 inch gap which is a bonding gap and he said some guttering is placed under the tiles between the gap is this true bcuz never heard of it?

Yea bonding gutter, normally GRP. You should strip the slates around 3 courses beyond the party wall to allow plenty of cover for your felt, rubber roofing EPDM (Or whatever membrane) as well as fitting the bonding gutter.

Just explain to the neighbour what you plan to do, they should be ok.

You can get specialist fasteners to negate the need.
I think EJOT sell them and ship to the UK.
