Hot water problem

I am having problems with my hot water over-heating. I had a Drayton HTS3 cylinder stat fitted around 18 months ago when my new boiler was fitted, and recently the hot water has been rather erratic. Sometimes it's not warm enough, and just lately since the cold snap the water is scalding hot. I have replaced the original stat with a new one the same but this problem persists. I have turned it down to 50 degrees but the water is still scalding hot. The rest of the system has been checked over by an engineer and he has narrowed the problem down to the cylinder stat as all the other controls seem to be working properly. This is a conventional open system with header tank and cylinder with a combined expansion and feed. Please can anyone help as I have run out of ideas.

Further to the above, I have tried another stat over the weekend, a Honeywell this time and everything seems to be ok now. I think the stat I fitted last week was faulty.
